Russian Tea Cakes!

Russian Tea Cakes AKA Snowballs are so good. They remind me of a sugar cookie with powdered sugar on it. It tastes excellent! 💯 They melt in your mouth, but still have a soft crunch of a cookie. I definitely recommend having with a cup of tea (or milk 🥛) to wash it down!

Ingredients:
1 Cup of butter (2 sticks), softened
½ Cup powdered sugar
1 teaspoon vanilla
2 ¼ cups all purpose flour
¾ cup finely chopped nuts (optional)
¼ teaspoon salt
Additional Powdered sugar
Instructions:
Heat oven to 400°F
Put ½ cup powdered sugar and 1 teaspoon vanilla in a large mixing bowl. Then stir in 2 ¼ cup all purpose flour, nuts, and salt until dough is completely mixed together and holds its form.
Shape the dough into 1 inch balls (about a tablespoon). Place 1 inch apart on an ungreased cookie sheet.
Bake 10 - 12 minutes or until firm, but NOT brown. You can cook for a longer amount of time, but once their burnt, you can't go back.
Remove from oven and place on another cookie sheet, or on a wire rack. Let them cool until they are warm, but not scorching hot.
Roll warm cookies in powdered sugar, then again once completely cooled.
